Getting access to your previous game save comes at a cost. And, that is running the early access version of the game, instead of the v1.0 release. As said earlier, each major update forces you to start fresh, but you can indeed roll back to the previous version of the game and then play it. Doing so is pretty easy, too. All you have to do is go to Steam and click on Library. Here, right-click on 7 Days to Die and then select the Properties option. Now, select the Beta tab, and then, from the drop-down menu, select the A21.2 version. This is the latest early access build before the full version was released. Once selected, you can launch the game, after which you should be able to access your previous saved game files.
